Fish & Game Processing Made Easy with Lansky Sharpeners

Those of us that get primal gratification from taking our protein off the wild landscapes of the earth value every tasty morsel provided to us. The old adage “Want not, Waste not” means more to those that process their own harvest because of the added time and energy put into the event. Sharp knives are part of increasing the efficiency on the processing table and Lansky Sharpeners helps keep knives sharp. With a lifetime of processing my own game & fish as well as those of my guided customers, I have some thoughts on keeping your knives sharp to get every tasty morsel from your harvest.

Start with the correct angle

Starting out with the correct angle on your knife edge is important for edge retention and to keep your process as efficient as possible on the table. My rule of thumb is for fine or delicate detail work having a steeper angle on your blade is best, like a 17 or 20 angle. For chopping, busting through bones or a lot of bone contact a 25 or 30 angle is going to give you longer life on your blade edge. The Lansky Controlled Angle sharpening system allows you to set a specific edge on the knife depending on a specific purpose. I use the system when I need to totally reset an edge or when a knife needs major sharpening.

Keeping up on the edge

It is a lot easier to keep a knife sharp if constant care is taken to keep the edge maintained. My preference is a sharpening rod. Whether it is a Ceramic, Steel, Alumina-Oxide or Diamond rod, giving your knife a couple of strokes as you work at the processing table will keep your knife cutting at maximum efficiency. The other option that is even quicker is using the QuadSharp to keep the knife sharp and at the same angle that you set it at using the Controlled Angle System. Give your knife 2-3 pulls and you are back to work. This is also the preferred method in the field as it takes up minimal space in your pack, but will allow you to keep your edge at its best.
