Sharpening Angles

17° Angle - A severe angle reccommended for razor blades, X-Acto© blades, scalpels or similar tools. Provides an extremely sharp but delicate edge.

20° Angle - A commonly used angle for higher quality blades and provides an excellent edge for kitchen cutlery and filet knives.

25° Angle - The recommended angle for most knives that need a durable, sharp edge. Ideal for hunting and outdoor knives.

30° Angle - An outstanding angle for knives that see the heavy use of cutting cardboard, wire or carpets. Recomended for heavy duty use.

This is the kit that I use and I love it. My grandfather used the Lansky Controlled Angle Sharpener and taught me when I was a kid. It's the best one out on the market and made in America. The diamond is very aggresive and will get the job done quickly. You might want to consider buying one ultra fine aluminum oxide hone to polish it off.

If you don't want to pay the premium for the diamond stones, then get the Universal Sharpening System made from alumina oxide and is the best value.

Debbie,Oh no, to be without a Santoku knife would drive me crazy! Why is it tankig so long to get a replacement Henckels Santoku sent to you? Oh, I would be complaining to the customer service manager right now if I were you. First you have to deal with a defective Henckels Santoku, and then you have to cool your heels waiting for a replacement. Ay yai yai! I hope you get your replacement Santoku soon!
